Jon Los’ Christmas Pudding

The traditional Christmas pudding is an undeniable part of Christmas culture – hate it or love it, a Christmas dinner would not be complete without a pudding! Our exceedingly talented Head Chef, Jon Los has already begun his festive preparations for a wonderful Christmas in Wiltshire. He has also very kindly provided us with his secret recipe to help ensure your Christmas Pudding is a roaring success this year.

Ingredients:

112g Vegetable Suet

112g Demerara Sugar

112g Currants

112g Raisins

112g Sultanas

28g Nibbed Almonds

60g Plain Flour

60g Breadcrumbs

60g Mixed Peel

24g Lemon Juice

2g Nutmeg Ground

1g Salt

1 Teaspoon Marmalade

2 Eggs

100ml Guinness

1 Bramley Apple (peeled and grated)

50 G Maple Syrup

50ml Brandy

Method:

Mix all ingredients together ensuring there are no pockets of flour or breadcrumbs and that all ingredients are mixed and coated in the mix.

Butter Dariole Moulds and place a small circle of greaseproof paper to cover the base.

Add the mix ¾ of the way up and tin foil moulds individually.

Place in a Bain Marie and bake in the oven at 140 Celsius for 2 hours, ensuring that the Bain Marie does not boil dry.

Brandy Custard

285ml Double Cream

4 egg yolks

1 vanilla Pod

25 ml Brandy

225g Sugar

Boil the cream then mix the yolks, sugar and vanilla seeds together, pour the cream onto the yolks and add back into the pan and cook until thickened. Then add the brandy and cook for another 30 seconds, making sure it doesn’t overcook as the yolks will scramble.

Serve with Brandy custard and fresh berries and ice cream.

Voila! There you have your very own luxury Christmas Pudding with an accompanying brandy custard.
